I pretty much planned my bachelorette party too...but that's more because I'm a control freak and wanted to make sure it was done how I wanted, haha. My MOH has been fantastic, thank goodness.
Sounds like you are better off without yours...and I definitely stick by my opinion that she's out of luck if she expects you to compensate her for what she spent. I'm sorry you are put through this so close to your wedding...I don't know what I would do it I were in your shoes!
