First let me say that I'm so sorry for the family's loss 
But something I've seen at other weddings in memory of a lost loved one, is a white rose layed on like the unity candle or sand ceremony table. Since you're going to be outdoors, I don't know if you're planning on either of these, but the rose could be set anywhere. Some people have also added a note in their ceremony programs recognizing those who are no longer with us...
